why is qué wrong?

the answer is using las tartas que son...

but why cant we use this-¡Qué exquisito son las tartas de Marta!

As Marcos said, you need the plural in the adjective "¡Qué exquisitas son las tartas de Marta!"

Bear in mind it the plural feminine -as to match with "tartas".

The option in the menu is using that expression with qué, but the adjective is showing the singular masculine "exquisito", therefore it would be grammatically incorrect.

You need an "s" on "exquisitos", so you get:  "Qué exquisitos son..."

A good way to remember this is that the verb "son" reminds us that we are using the plural, so we make sure that everything matches.
