Where does “eso” fit in, and could it be used in the example below? If so, how would they be different?
I think I always use “eso” in these cases; never esto. Wondering if I’ve always been wrong.
“ Esto no es lo que yo dije.
This is not what I said.”

No, you haven't been wrong at all. The use of these as pronouns is very often subjective. You can use esto or esto in this sentence. If you use "esto" as we did in this lesson, the situation could be the person looking at something written on a piece of paper as a sort of "declaration". This could trigger the use of "esto" as seeing "what was said" close to you and being more precise. But, as you said, it would be more often seen with "eso" in a more general way, without that specific nuance.
