What's the difference if I use 'todos los correos' instead in the first example?

We don't use the noun "correo" in plural referring to "mail" in general, so it wouldn't work with "todos los correos" - however you can say "todas las cartas..." (all the letters) as a countable noun.
I hope it clarifies it.
