In the question"Pablo doesn't like surprise parties" isn't "surprise" an adjective and so the translation would be "Pablo no le gustan las fiestas sorpresas (in the plural).   I know this is not related to the lesson but ...

"fiesta sorpresa" is a set expression that is using a noun "sorpresa" attached to fiesta, instead of using for example "de + noun" as in, for example, "fiesta de cumpleaños" or "ensalada de frutas". This is how we call a "surprise party"and we omit the "de" in this case.
