Why do you say que interesante and not como interesante
Simply put, como means "as" or "like"or "about" and a few other things e.g. "Como puedes ver .... [as you can see, .......]."
Cómo [with an accent] means "how" or "why" posed as a question e.g. "¿Cómo te llamas?"
The example that you quoted "¡Qué interesante!" is an exclamation. Here is a full lesson on the different ways that you can use this structure.

Yes, as John said, the word "como" in Spanish doesn't always translate as how. As you will be able to see in the lesson John mentions, with that type of exclamatory sentences, the "how" in English becomes a "qué".
