Would it be possible to translate "What more could I ask for?" as "¿Para lo que más podría pedir?

Not with the preposition, no.
It doesn't work in Spanish. So, in English you express this with "ask for" but in Spanish we don't use any preposition.
If you see these other sentences also using pedir, they don't use a preposition in Spanish:
Voy a pedir un aumento de sueldo.
I'm going to ask for a payrise.
Voy a pedir un cuchillo limpio al camarero, este está sucio.
I'm going to ask the waiter for a clean knife, this one is dirty.
You could use podría, instead of podía for could, though:
¿Qué más podría pedir?
