There was a sentence about monuments that was asking me for which form of "arabe" that I should have used. I put "arabes" but it was marked wrong and it said that it should be arabe - is that correct and are there any more adjectives like this that are invariable in both the singular and plural?

The question you came across is this one:
Hay muchos monumentos de la cultura árabe en España.
(There are many monuments from Arabic culture in Spain.)
You need the singular "árabe" here because the adjective is referring to "cultura", not "monumentos". It'd be different if we had said:
Hay muchos monumentos árabes en España.
There are lots of Arabic monuments in Spain.

The plural of "árabe" is "árabes' both as an adjective and a noun. I wonder was it marked incorrect because you missed off the accent? If not ... I'm sure Inma will check it for you.
You can get accents for all the necessary characters by holding down the letter key and selecting the character / accent that you want.
