In the first sentence, is it possible to omit the “de” ? ie, “escoger entre todas las fiestas” ?

If so, does the nuance of the meaning change at all?

Hola A,

yes, you could omit "de" and say "escoger entre todas las fiestas". When we are saying "to choose among..." we can also use "de entre", like in this sentence.
