In the sentence: my girlfriend says that you will be worth it. Why would you use valdrás, instead of valdrá la pena? You are not valuing it, you are just worth it.

"valer la pena" can be used to say that something is worth it or someone is worth it. If you say "someone is worth it" then you need to make the verb agree with the person:
Mi novio vale la pena.
Tú vales la pena.
Vale la pena estar contigo.
