I am studying Spanish under the LATAM version of the app and I see the hubiese is one of the mandatory response fields for this question. Shouldn't the LATAM version of the app only contain Latin American Spanish responses?

Although hubiese is traditionally associated with European Spanish, it is also used throughout Latin America, especially in formal writing and educated speech. For that reason, we accept both hubiera and hubiese as valid answers in the Latin American version of the app.
The main regional distinction in our Latin American version is avoiding forms that are exclusive to Spain, such as vosotros. However, forms like hubiese, which are used across the Spanish-speaking world, remain valid.
We hope this helps clarify why it appears as an accepted answer.
