isn't this first answer supposed to be "he gustado", since it is first person singular?  And isn't the second answer supposed to be he interesado for the same reason?

If you read the lesson, it says that the verb (gustar, interesar, etc) is always conjugated in the 3rd person singular or plural, agreeing with "what" is liked, not with "who" likes. Therefore, the answers are:  

Siempre me ha gustado leer... 

Nunca me han interesado los cuadros...

3rd person singular "ha gustado" because what you like is "leer" - when we like "doing something" that is treated as if it was "one thing", so the verb goes in singular.

3rd person plural "han interesado" because what you're not interested in is "the pictures", which is something in plural, hence the verb in the 3rd person plural.
