Good question! "moraos" comes from the adjective "morados", literally "purple". We are omitting the -d from morados. Have a look at this to explain the omission of letter -d.
Why we use that colour for that specific expression about "eating a lot" is a bit unknown. I have read somewhere that there was an illness where there was lack of oxygen and that was associated to eating excessively and your face turning blueish; it could come from there.
