"Mathematics" can be taken as a singular noun. Therefore it seems that a correct format in Spanish would be
"te gusta mathematics".
Maths/ Mathematics is always used in plural in Spanish, therefore, with gustar it is:
you have to say te gusta la matemática - it's a singular feminine noun in Spanish
Like Marcia says you have to use the definite article with the things that you like e.g. "Me gusta el chocolate," or "Me gusta la matemática" or "Me gusta el café." There is a separate rule for people or places: "Me gusta Marcella" or "Me gusta Segovia" where you can drop the definite article.
