We say “prefieres ir a la playa” because after the verb preferir, when we mention another action, we use the infinitive form of the verb: preferir + infinitivo. In this case, the action is ir, so the correct structure is:

prefieres ir a la playa

The form “va” is the third-person singular of the verb ir and it cannot be used after prefieres because it would create two conjugated verbs in a row, which is not correct in this structure.
