It's using gusta in singular because "la sopa" is singular, "de verduras" is simply extra descriptive information about that noun "sopa", as if it was an adjective. So:
Me gustan las verduras.
I like vegetables.
Me gusta la sopa de verduras.
I like vegetable soup.
