Desde hace una semana solo estoy comiendo fruta.

Because you used the gerundio [estoy comiendo] when you should have used the present tense. Although we use the gerund in English we don't in Spanish.

Take a look at the lesson - Using desde (hace) with El Presente instead of El Pretérito Perfecto to express since/for - It will explain everything.

The usual tense used with "desde hace + length of time" is the simple present, as we illustrate in our lesson.

Using the progressive/continuous present would be a bit unusual, but you could also use it if you want to emphasise the continuity of your actions:

Como solo fruta desde hace una semana.

I've been eating fruit only for a week.

Estoy comiendo solo fruta desde hace una semana.

I've been eating frut only for a week.
