Why is creer not the right verb for "she thought that" . Difference between pensar and creer please?

Creer is also correct here so we will be adding this option to this sentence.
As for the difference, they are pretty much interchangeable but pensar is generally indicating a deeper thinking or reasoning, while creer is more about holding a belief or opinion.
As there is no indication on any nuance in this writing challenge both could be used.
