Hello, I don't understand, why "fascinar" always has to be conjugated in the 3rd person singular or plural, as you have written in the lesson. If I want to say instead of "I am fascinated by Hollywood actresses." the sentence "I am fascinated by you.", I think I have to say "Me fascinas tú." I think, that it's only always in the 3rd person, if it is followed by a verb. And it should be the same with gustar and encantar. Or did I understand something wrong?

You're right. To say you are fascinated by something/someone you can also use "estar fascinado con/por":
Estoy fascinado con esa película.
Está fascinado por Elena.
You can also say:
Le fascina la película.
Le fascinan las películas de terror.
Me fascina Elena.
Me fascina montar a caballo.
This way you use it like "gustar" as in gusta/gustan.
When you're specifically talking about a stronger feeling between two people (generally physical attraction) we can also use the verb agreeing with the person, like in your example:
Me fascinas tú. ( = tú, subject; fascinas = verb; a mí = indirect obj pronoun)
