Have you heard of Fernando Helado?
It's not his real name of course, Fernando Sáenz is such an esteemed ice-cream maker in his native La Rioja that as well as this apodo he is also known as Chef del frío. With the easing of lockdown restrictions he's reopened his heladería featuring two new inventions created during confinement: helado de vainas de guisantes lágrima con corteza de limón verde (tear pea pod with lime zest ice-cream) and also an aquafaba ice-cream suitable for celiacs and vegans!
