Why is this pondrías and not pondrías abrir to say You would open a shoe store?

The question says:

Tú pondrías una zapatería en esta calle(You would open a shoe shop in this street.)     Conjugate poner in the conditional

Sometimes we use the verb "poner" meaning "to open" when we refer to some kind of establishmet like a shop, but the English translation is using the verb "open" because there is no literal translation. So, poner una zapatería means "to open a shoe shop", the same as "poner una pescadería, una frutería, una churrería..." meaning that you are "setting up, starting [and opening] a new business".

You can of course say as well "Tú abrirías una zapatería..."  for "you would open..." but the lesson is about the conjugation of poner in the conditional in this case.
